Prep time: approx 3/4 hour incl. cooking
5 large carrots, chopped
(or 2 cups chopped beets)
7 slices bacon
1 large onion
Steam beets/carrots until soft. Drain. Chop bacon and onion finely and fry the bacon, adding the onion to it. In a larger pot, mix carrots (or beets) and onions and bacon. Add salt and pepper to taste. For best flavour, allow to sit a bit before serving.
