15 Minute Quinoa Salad

Serves 2

¾ cup dry quinoa
¾ cup water
½ red onion
1-1/2 tbsp white vinegar
1/2tbsp lemon juice
1/2c leftover chicken, or white beans
feta cheese, crumbled
1 bunch spinach
salt to taste


1. Put quinoa and water into a microwave safe bowl or measuring cup (use a larger bowl or measuring cup to prevent your quinoa from boiling over). Microwave on high (or use ‘time cook’ option) for 12 min. Please note that the time depends on the power of your microwave. If the quinoa is not done after 12min, just pop it in for a bit longer.
2. Meanwhile, chop up your onion into small pieces, cut up your leftover chicken (if using), rinse and drain the white beans, and wash and chop the spinach
3. Once quinoa is cooked, remove it from the microwave. Add onion, spinach, chicken or beans, lemon juice, white vinegar, salt and feta cheese. Mix well.
4. Enjoy!!
