Carrot Raita Recipe

A spicy, refreshing salad that goes nicely with couscous or quinoa.

What you’ll need:

• 2 c yogourt
• 1/2 tsp salt
• 2 grated carrots (medium large)
• 1/2 tsp cumin
• 1/4 tsp ground cayenne pepper

What to do:

1. Stir yogourt and salt into grated carrot until weil-mixed.
2. Sprinkle cumin and cayenne over top.

Makes about 4 servings.
