Mashed Potato Cheese Puffs Recipe
Easy, cheesy, and delicious! You can freeze the left-overs (if you have any. . .)
What you’ll need:
• 2 eggs
• 1 1/3 c mashed potatoes (hot or cold)
• 3 tablespoons hot milk
• 1/3 c grated cheddar cheese
• 1/4 tsp salt
• 1/4 tsp paprika
• 1/4 tsp celery salt
• 1/2 tsp onion, finely grated
• 1 tsp chopped fresh parsley or 1/3 tsp dried parsley
• 1 1/2 tablespoon soft butter
What to do:
1. Separate the eggs and beat the yolks.
2. Add the potatoes, milk and cheese to the yolks and beat until fluffy.
3. Add the seasonings, onion and parsley and mix in well.
4. Beat the egg whites until stiff.
5. Fold egg whites into the potato mixture.
6. Spoon the batter into mounds on a greased pan and brush the tops with soft butter.
7. Bake for about 20 minutes.
