Radishes – Recipes for Fall and Winter
Radish Greens – Potato Soup
Here’s a warming soup for cold days… a perfect use for those lovely winter radish greens this time of the year.
What You’ll Need:

3 Tblsp butter

2 medium onions, chopped coarsely

2 bunches of radish greens (about 5 cups chopped)

4 cups of chicken broth

4 larger potatoes, cut into ½ inch cubes

small handful of Chinese celery, chopped finely

salt and pepper to taste
What To Do:

Put butter into a medium sized pot and let it melt over medium heat.

Add the onions. Stir and cook until they begin to turn golden.

Add radish greens. Once greens have wilted add the potatoes and broth.

Let soup come to a gentle boil. Then reduce heat and stir in the Chinese celery.

Let simmer for about 25 minutes, stirring occasionally.

Add a little salt and pepper to taste.

Soup can be served chunky, or you can put it through a food processor or blender to get a smooth creamy consistency. Then reheat gently to a simmer and serve topped with garnish of finely grated radish, chopped leaves of Chinese celery or Italian Parsley.
Here’s a Tip:
If you don’t have any chicken broth on hand, you can make a flavoured substitute using chicken bouillon cubes.
Radish Spread
For a quick healthy snack try this simple spread. It goes well on dark rye bread, pumpernickel or pieces of pita bread.
What You’ll Need:
- 1 c plain yogourt
- ½ c grated radish
- ¼ tsp lemon juice
- 3 Tblsp finely chopped parsley
- salt
What To Do:
- Mix ingredients together.
- Mix in a little salt to suit your taste.
- Enjoy.
