Sauteed Vegetable Medley with Garlic and Herbs

Ingredients:

– 1 zucchini, sliced
– 1 tomato, diced
– 1 cup green beans, trimmed
– 2 cloves of garlic, minced
– 1/2 onion, sliced
– 1 cup kale, chopped
– 1/4 cup chopped parsley
– 1 cucumber, diced
– 2 tablespoons olive oil
– Salt and pepper to taste
– 1 teaspoon dried oregano
– 1 teaspoon dried thyme


Instructions:


1. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.

2. Add the sliced zucchini and sauté for 3-4 minutes until lightly browned. Remove from the skillet and set aside.

3. In the same skillet, add another tablespoon of olive oil and sauté the minced garlic and sliced onions for 2-3 minutes until fragrant.

4. Add the diced tomatoes and green beans to the skillet and cook for 4-5 minutes until the vegetables are slightly softened.

5. Season the vegetable mixture with dried oregano, dried thyme, and salt and pepper to taste. Stir to combine.

6. Add the chopped kale and sauté for another 2-3 minutes until the kale is wilted.

7. Finally, add the sautéed zucchini back to the skillet and mix with the rest of the vegetables.

8. Turn off the heat and sprinkle the chopped parsley on top of the vegetable medley.

9. Serve the sautéed vegetable medley with a side of diced cucumber for a refreshing and crunchy addition. Enjoy as a side dish or serve over rice or quinoa for a complete meal.

Optional: You can also add a protein of your choice, such as grilled chicken or tofu, to make this dish more filling and nutritious.
