Sauteed Snap Beans With Herbs

Here’s a quick and delicious way to prepare snap beans – green, yellow, purple or any colour you have on hand.

 

What You’ll Need:

  • 1 lb snap beans (green, yellow, purple or mix them up)
  • 3 garlic cloves
  • 2 tablespoons cooking oil
  • salt and pepper to taste
  • fresh parsley/dill/cilantro

 

What To Do:

  1. Cut beans into 1” sections
  2. Crush and chop the garlic cloves
  3. Heat the oil and add the garlic. Saute garlic until just tender.
  4. Add the beans. Continue to saute for 2-3 minutes
  5. Add 1 cup water. Cook for 20 minutes.
  6. Remove from heat.
  7. Add chopped fresh parsley/dill/or cilantro
  8. Enjoy

Note: Purple beans will loose most of their purple in the cooking process. Most all-purple varieties of snap beans will turn to an olive green.
