Here are some recipes to turn those onions into tasty meals.

Onion-Apple Casserole

What You’ll Need:

  • 6 medium onions
  • 4 medium apples
  • 8 slices of bacon
  • 2/3 cup bread crumbs
  • ¾ c water
  • ½ tsp salt

What To Do:

  1. Preheat oven to 375F.
  2. Peel and slice the onions 1/8 (3mm) inch thick.
  3. Peel and core the apples. Cut into 1/8 inch (3mm) thick slices.
  4. Cut the bacon into small pieces and fry in a pan until lightly crispy.
  5. Add bread crumbs to the bacon in the pan and stir in.
  6. Grease a baking dish and arrange the onions, apples and bacon with crumbs in alternating layers. Finishing with a thin layer of bacon and most of the bread crumbs.
  7. Dissolve the salt in the water and pour over the top layer in the baking dish.
  8. Sprinkle a few bread crumbs on top.
  9. Cover and bake for 30 minutes. Remove the cover. Cook another 15 minutes.
  10. Enjoy

Hint:

We use a variation on this without the bacon and crumbs to make a nice sugarless desert using tart apples and a little bit of cinnamon and allspice. Serve it up warm, topped with thick cream or vanilla ice cream.

Cheesy Onion Casserole

For a quick healthy snack try this simple spread. It goes well on dark rye bread, pumpernickel or pieces of pita bread.

What You’ll Need:

  • ½ c milk
  • ¼ c butter
  • ¼ tsp salt
  • 1/8 tsp ground black pepper
  • 1 ½ lbs (¾ kg) onions
  • 2 egg yolks
  • ½ c sour cream
  • 1 c Old Cheddar Cheese
  • 1/3 c dry bread crumbs

What To Do:

  1. Peel onions and cut into thick slices.
  2. Preheat oven to 350F.
  3. Melt butter in a sauce pan and add milk, salt and pepper. Add onion and cook about 15 minutes, until just tender.
  4. Pour onion mixture into a 1 liter casserole dish.
  5. Mix together beaten egg yolks, sour cream, and shredded cheese. Pour this mixture over the onions.
  6. Sprinkle the bread crumbs over top.
  7. Cook in 350F oven for 12 minutes.
  8. Let cool 5 minutes. Enjoy.

Mushroom-Stuffed Onions

What You’ll Need:

  • 6 large onions
  • 1 c chopped fresh mushrooms
  • 1 tsp lemon juice
  • 2 Tblsp butter
  • 1 c stuffing mix seasoned with herbs
  • ¼ tsp salt
  • ¼ tsp crushed dried thyme
  • shredded Parmesan cheese

What To Do:

  1. Cook onions about 15 minutes so centers pop up.
  2. Scoop out the center of each onion leaving a couple outer rings.
  3. Chop up the onion centers.
  4. Heat butter in a large fry pan and add chopped mushrooms and lemon juice. Stir and cook until lightly browned and tender.
  5. Mix chopped onions into mushroom mixture along with salt, thyme and stuffing mix.
  6. Spoon the mix into the onion shells and sprinkle Parmesan cheese on top.
  7. Set onions in a shallow baking dish. Add boiling water to ¼ deep. Bake at 350F until onions are tender, about 35 minutes.
