Sausage and Kale Soup Recipe

A colourful comforting soup for colder days ahead.

What you’ll need:

  • 1 lb Italian sausage
  • 6 cups fresh kale, chopped
  • 2 smaller cans of beans – black
  • 1 can crushed tomatoes
  • 3 cups of carrot, finely chopped
  • 1 medium onion, chopped fine
  • 3 medium garlic cloves, minced
  • 1 tsp dried oregano
  • ½ tsp salt
  • 1/8 tsp black pepper
  • 5 cups chicken stock
  • Parmesan cheese, grated

What to do:

  1. Cook sausage in fry pan or skillet over medium heat until cooked through. Let cool a bit and then cut it into small cubes and put them into a slow cooker.
  2. Add kale, beans, tomatoes, carrots, onion, garlic, oregano and stock to the slow cooker.
  3. Stir to mix and then cover.
  4. Set on Low to slow cook 9 hours.
  5. Stir it at 4 hours and add the spices and Parmesan cheese.
