Sausage and Kale Soup Recipe
A colourful comforting soup for colder days ahead.
What you’ll need:
- 1 lb Italian sausage
- 6 cups fresh kale, chopped
- 2 smaller cans of beans – black
- 1 can crushed tomatoes
- 3 cups of carrot, finely chopped
- 1 medium onion, chopped fine
- 3 medium garlic cloves, minced
- 1 tsp dried oregano
- ½ tsp salt
- 1/8 tsp black pepper
- 5 cups chicken stock
- Parmesan cheese, grated
What to do:
- Cook sausage in fry pan or skillet over medium heat until cooked through. Let cool a bit and then cut it into small cubes and put them into a slow cooker.
- Add kale, beans, tomatoes, carrots, onion, garlic, oregano and stock to the slow cooker.
- Stir to mix and then cover.
- Set on Low to slow cook 9 hours.
- Stir it at 4 hours and add the spices and Parmesan cheese.
