Recipe – Spicy Sweet Potato Kale Bean Soup

Perfect for fall!

What you’ll need:

  • 2 Tablespoons cooking oil
  • 1 medium onion, chopped finely
  • 3 garlic cloves, minced
  • 5 or 6 small to medium sized sweet potatoes, cubed
  • 2 medium, tart green apples, cored, peeled and chopped
  • 1 tsp honey
  • 1 tsp dried sage
  • 1 Hungarian Hot Wax pepper, chopped fine
  • ½ tsp salt
  • ¼ tsp pepper
  • 3 cans vegetable broth
  • 2 cans kidney beans, rinsed and drained
  • 3 cups kale, chopped
  • ½ cup whipping cream or plain yogourt
  • Parmesan cheese, grated (optional for topping

What to do:

  1. In a skillet, add oil and onion and garlic. Heat over medium heat, stirring occasionally, until onion is soft and lightly browned.
  2. In a large pot, add vegetable broth, sweet potatoes, apples, spices. Let cook over medium heat until sweet potatoes are easily pierced with a fork.
  3. Add the beans, and kale and let simmer over lower heat for another 15 minutes.
  4. Stir in the whipping cream.
  5. Enjoy.  Top with grated Parmesan if desired.
