Recipe – Spicy Sweet Potato Kale Bean Soup
Perfect for fall!
What you’ll need:
- 2 Tablespoons cooking oil
- 1 medium onion, chopped finely
- 3 garlic cloves, minced
- 5 or 6 small to medium sized sweet potatoes, cubed
- 2 medium, tart green apples, cored, peeled and chopped
- 1 tsp honey
- 1 tsp dried sage
- 1 Hungarian Hot Wax pepper, chopped fine
- ½ tsp salt
- ¼ tsp pepper
- 3 cans vegetable broth
- 2 cans kidney beans, rinsed and drained
- 3 cups kale, chopped
- ½ cup whipping cream or plain yogourt
- Parmesan cheese, grated (optional for topping
What to do:
- In a skillet, add oil and onion and garlic. Heat over medium heat, stirring occasionally, until onion is soft and lightly browned.
- In a large pot, add vegetable broth, sweet potatoes, apples, spices. Let cook over medium heat until sweet potatoes are easily pierced with a fork.
- Add the beans, and kale and let simmer over lower heat for another 15 minutes.
- Stir in the whipping cream.
- Enjoy. Top with grated Parmesan if desired.
