Borage Soup
Try this unusual, slightly cucumber flavoured soup. . .Cucumber flavour?? There’s no cucumber in the ingredients! Here’s the secret: it’s the borage that gives the cucumber like flavour.
What you’ll need:
• 800g borage leaves
• 3 green onions
• 2 cloves of garlic or 3 garlic scapes
• 1 Tablespoon vegetable oil
• 1 bunch fresh parsley chopped
• 2 c chicken stock (or prepared from bouillon cubes)
• 2 medium potatoes, cut into 1/2 inch cubes
• ground pepper
• salt
What to do:
1. Rinse off the leaves and cut into small pieces.
2. Chop the onions very fine.
3. Chop the garlic very fine.
4. Heat oil in a pot. Add the onion and garlic and cook until translucent.
5. Add stock and simmer for 2 minutes.
6. Add the potatoes and boil 5 minutes.
7. Add the borage leaves and let simmer until potatoes are soft and easily mashed.
8. Puree in a food processor or blender.
9. Add salt and pepper to taste.
10. Enjoy
