Garlic Fried Vegetable Marrow
This is a quick, easy and tasty side dish- great for a summer bbq! Marrow is a mild flavoured, zucchini-like squash with a slightly spongy texture and very tender skin.
PREP TIME: 10-15min
- 1-2 cloves garlic (chopped) OR garlic scapes
- 1 marrow squash, washed
- cooking oil (olive/corn/sunflower)
Thinly slice squash. Heat oil in a frying pan. Add garlic. Fry garlic until translucent (1-2 min) Add squash. Turn down heat to medium. Saute squash until it is limp. Sprinkle with salt and pepper to taste.
