Kale Pesto
A flavourful nutrient rich pesto to serve with pasta noodles, meats or a spread on sandwiches or crackers.
What you’ll need:
- 1 medium sized clove of garlic
- 1/3 cup roasted peanuts
- 1/4 cup grated Parmesan cheese
- ½ cup corn oil or olive oil
- 1 bunch of kale (about 10 leaves)
- salt
What to do:
- Using a processor, chop garlic and peanuts until fine.
- Coarsely chop the kale leaves or tear into large pieces.
- Add the Parmesan and then add a bit of kale at a time, pulsing after each addition until all is added and you have a paste. Add the oil.
- Add salt to taste.
- Enjoy.
