Kale Pesto

A flavourful nutrient rich pesto to serve with pasta noodles, meats or a spread on sandwiches or crackers.

What you’ll need:

  • 1 medium sized clove of garlic
  • 1/3 cup roasted peanuts
  • 1/4 cup grated Parmesan cheese
  • ½ cup corn oil or olive oil
  • 1 bunch of kale (about 10 leaves)
  • salt

What to do:

  1. Using a processor, chop garlic and peanuts until fine.
  2. Coarsely chop the kale leaves or tear into large pieces.
  3. Add the Parmesan and then add a bit of kale at a time, pulsing after each addition until all is added and you have a paste. Add the oil.
  4. Add salt to taste.
  5. Enjoy.
