Baked Carrots Recipe
This side dish is an easy way to use up carrots. If you’ve also got beets on hand, you could shred one or two and add it in with the carrots.
What you’ll need:
• 2 T butter
• 1/3 c chopped onion
• 2 c shredded carrots
• 1/2 tsp salt
• 1/2 tsp honey
• 1/2 c water or stock
What to do:
1. Melt butter
2. Saute onions in butter until they are tender.
3. Add carrots to the onion.
4. Put ingredients into a baking dish.
5. Sprinkle salt over top and spread honey.
6. Pour water or stock over top.
7. Cover dish and bake until carrots are tender.
Makes about 4 servings.
